Delicious banana walnut muffins are a great healthy alternative for an easy grab-and-go snack.
Ingredients
- Muffins
- 3 Large Overripe Bananas - about 1 1/2 cups mashed
- 1 Large Egg
- 1/3 cup Nonfat Plain Greek Yogurt
- 2 tbsp Coconut Oil (melted and cooled)
- 1/3 cup Light Brown Sugar
- 1/4 cup Maple Syrup
- 1 tsp Vanilla Extract
- 1 tsp Baking Soda
- 1/4 Kosher Salt
- 1 tsp Ground Cinnamon
- 1 1/2 cups White Whole Wheat Flour
- 1 cup Walnut Halves (toasted and chopped)
Instructions
- Step 1
- Preheat the oven to 350 degrees. Line a 12-cup muffin tin with paper liners and lightly grease it with nonstick spray
- Step 2
- Mash bananas in the bottom of a large bowl until mostly smooth.
- Step 3
- Whisk in the egg, and then yogurt and oil.
- Step 4
- Whisk in the brown sugar, maple syrup, and vanilla.
- Step 5
- Sprinkle the baking soda, salt, and cinnamon over the top, and then stir or combine.
- Step 6
- Gently stir in the flour until barely combined, and then fold in the walnuts.
- Step 7
- Scoop the mixture into the prepared muffin pan, filling each cup 3/4 of the way.
- Step 8
- Bake for 20-22 minutes, until a toothpick inserted in the center comes out clean and muffins spring back lightly when touched in the center
