Blueberry Walnut Bread

This is a great way to switch up your morning breakfast routine with delicious walnut bread.

Ingredients:

  • Bread
    • 1 cup California Walnuts (chopped)
    • 2 cups All-Purpose Flour
    • 2 tsp Baking Powder
    • 1/4 tsp Salt
    • 1 cup Granulated Sugar
    • 3/4 cup Buttermilk
    • 2 Eggs 
    • 1 tsp Pure Vanilla Extract 
    • 2 tbsp Unsalted Butter (melted)
    • 1 cup Blueberries (fresh or frozen)
  • Glaze
    •  3 tbsp Granulated Sugar
    • 2 tbsp Nut Butter of Choice

Instructions

  • Step 1
  • Preheat oven to 350 degrees.
  • Step 2
  • In a dry skillet, toast the walnuts over medium-high heat for 1-2 minute. Set aside.
  • Step 3
  • In a large bowl, combine all-purpose flour, baking soda, baking powder, and salt. Whisk to combine.
  • Step 4
  • In a medium bowl, combine sugar, buttermilk, eggs, vanilla, melted butter, and oil. Whisk to just combine.
  • Step 5
  • Make a well in the center of the dry ingredients. Add liquid ingredients and mix gently just to combine, do not over mix Gently fold in walnuts and blueberries. 
  • Step 6
  • Pour batter into a greased and floured 8x5 inch loaf pan. Bake in preheated oven for 55-60 minutes or until toothpick inserted in center comes out clean.
  • Step 7
  • Cool on rack for 20 minutes, remove from pan and cool to room temperature. Enjoy!
