This is a great way to switch up your morning breakfast routine with delicious walnut bread.
Ingredients:
- Bread
- 1 cup California Walnuts (chopped)
- 2 cups All-Purpose Flour
- 2 tsp Baking Powder
- 1/4 tsp Salt
- 1 cup Granulated Sugar
- 3/4 cup Buttermilk
- 2 Eggs
- 1 tsp Pure Vanilla Extract
- 2 tbsp Unsalted Butter (melted)
- 1 cup Blueberries (fresh or frozen)
- Glaze
- 3 tbsp Granulated Sugar
- 2 tbsp Nut Butter of Choice
Instructions
- Step 1
- Preheat oven to 350 degrees.
- Step 2
- In a dry skillet, toast the walnuts over medium-high heat for 1-2 minute. Set aside.
- Step 3
- In a large bowl, combine all-purpose flour, baking soda, baking powder, and salt. Whisk to combine.
- Step 4
- In a medium bowl, combine sugar, buttermilk, eggs, vanilla, melted butter, and oil. Whisk to just combine.
- Step 5
- Make a well in the center of the dry ingredients. Add liquid ingredients and mix gently just to combine, do not over mix Gently fold in walnuts and blueberries.
- Step 6
- Pour batter into a greased and floured 8x5 inch loaf pan. Bake in preheated oven for 55-60 minutes or until toothpick inserted in center comes out clean.
- Step 7
- Cool on rack for 20 minutes, remove from pan and cool to room temperature. Enjoy!
