Roasted Green Beans with Lemon & Walnuts

This recipe adds a perfect amount of tang and crunch to this classic side dish!

 

Ingredients

  • 2 lbs Fresh Green Beans
  • 2 Shallots, thinly sliced
  • 6 Garlic Cloves, crushed
  • 2 tbsp Olive Oil
  • 3/4 tsp Salt
  • 1/4 tsp Pepper
  • 2 tsp Grated Lemon Zest
  • 1/2 cup Walnuts, chopped and toasted

Instructions

  • Step 1
  • Preheat oven to 425 degrees
  • Step 2
  • In a large bowl, combine green beans, shallots, and garlic. Drizzle with oil, and sprinkle with salt and pepper.
  • Step 3
  • Transfer to two 15x10x1 inch baking pans coated with cooking spray.
  • Step 4
  • Roast 15-20 minutes or until tender and lightly browned, stirring occasionally. Remove from oven.
  • Step 5
  • Stir in 1 tsp lemon zest. Sprinkle with walnuts and remaining lemon zest.
